Excited to share that we harvested our first 1.5 pounds of red potatoes this week!
AWESOME flavor. The texture is quite creamy! I was tempted to dig for more, but the plants haven’t started to die off yet. (We also planted blue and Kennebec white potatoes.)
Definitely harvest some Red Potatoes early if you are growing them. They are so wonderful as “new potatoes.” We boiled, baked, and fried them. Yummy.
We will not take a lot from the garden now, though. We want to be able to put up some potatoes come this end of summer / fall. We’re not sure how we are going to store our potatoes, however. We do not have the best storage conditions. I’ve read conflicting advice, as well. That’s the tough part. How do you know what works until you’ve tried it?
